How to split a chicken

Here's a quicky for my next post on split roasted chicken. This technique takes a whole chicken and turns it in to two large pieces that are best cooked at high temperatures. Splitting all other birds will basically follow the same technique as well.

Splitting a chicken:

Start with a whole chicken, breast side down:

Starting at either the right or left side of the spine, cut all the way down the vertebrae using kitchen shears:

Do the same thing with the next side to remove the spine:

Flip the chicken over and cut down the middle of the breast bone to finish:
This is after I seasoned it and everything, but you get the idea.
